Introduction notes to Food Safety Standards Video.

Video focuses on school canteens but relevant to any semi-commercial kitchen involving voluntary staff.

1. Required to comply with CCC Health Department regulations

  • Catering coordinator needs to be able confidently report that most voluntary workers have viewed video and that all have received (with entrance pass envelope) and read their Health and Hygiene advice leaflet.

2. Committee and voluntary workers have an obligation to provide a safe work environment and maintain hygienic food preparation practices.

  • to continue to excellent record of our church and avoid a worst case scenario of bad publicity, litigation etc.
  • to provide the standard of catering the general public is entitled to and expects – because we would want to anyway.

3. Implementation – not just a matter of knowing but of:

  • constant adherence to maintain standard
  • public perceptions – i.e. being seen to be doing the correct thing. Much of our work area is very visible and patrons will be interested and pleased to see sound practises but disturbed if cause for doubt.

4. Extra comments for smooth operations at show diner.

  • A variety of systems specific to our own operations will be in place at diner e.g. bend/table wipe down and cleaning, use of disposable gloves, pie management, meals & breaks for voluntary workers etc. This information will be clearly set out on signage throughout the diner – please take time on arrival to read.
  • A reminder that the 6 – 10 p.m. shift is also the clean up shift in each work area.
